peppermint creams

So, after that dessert in the My Kitchen Rules final last night; I felt the need.  
The need… 
for Peppermint and Chocolate!
I re-visited a recipe from this book…

I’ve had this book for quite a long time  πŸ™‚

These yummies are so easy.  

Basically, the recipe is a stiffly beaten egg white, with a bit of peppermint essence and lots of sifted icing sugar mixed in, and kneaded in.  One egg white took almost all of this 500g bag of pure icing sugar… there was about one cup leftover after.

You let the rounds dry out for a few hours, then… 

Hey presto! after dinner mints.

I made big ones, and small ones.  And can I just say; yum.  I’m allowing myself one small one per day, and hopefully the family will polish them all off before my willpower breaks  πŸ˜‰

I would definitely describe myself as one of the worst cooks in the world.  I’m more of a “meal assembler”.  But these are easy enough… you could say; child’s play!

  3. holy smokes, chocolate and peppermint is my absolute fav. i've seen recipes that use shortening and powd sugar, but this sounds way better! i'll have to try this, though i doubt i have your amazing willpower…

  11. Oh wow! I'm guessing my hubby and toddler would love them! Definitely not the worst cook i'm sure. me on the other hand, the most boring cook. same old rotation. if only i can be a better assembler. πŸ™‚

  12. Oh yes, I make these every Christmas. I like to colour some a gentle green and use teeny tiny Christmas cutters. You can also use lemon essence or I read about strawberry in the UK too. Ah Pooh, I love playing Pooh sticks!!

  19. They look really scrummy, they would make a nice pressie wrapped in cellophane.
    They are going to do another great British sewing bee series next year. I believe over a 6 week period this time, they are asking for participants to apply already.

  24. Heavens…you got a cookbook as a reward for a good report card? That says a lot about you to start… No idea about the chocolate covering but before you get to that part, these are definitely low fat. You must have a sweet tooth to crave these, but still, one a day is very … disciplined.

  28. I had that book, but think I finally gave it away a few years ago. 1975 sounds about right. I would have been 10 years old. Seems I should have kept it and tried this recipe. The flashback made me smile.

  30. I'm late to the party… just back to this post because having people tomorrow for coffee I decided to make some chocolates and I thought why not give these a try. Oh my, perfect! I used chocolat noir, hummmm. Now if tomorrow can come before I ate them all!
